Cysteine
is a sulfur containing amino acid that derives its uniqueness from chemically
reactive hydroxyl group. It provides stability to proteins through building
disulfide bridges. It is primarily obtained from feathers. Feathers are heated
with hydrochloric acid to obtain cysteine.
It is also extracted from bristles, human hair and hooves of swine. It
has the similar structure as that of serine, but with one of its oxygen-atom is
substituted by sulfur. It is mainly used in the production of cysteine
derivatives S-(carboxymethyl)-L-cysteine and N-acetyl-L-cysteine in the
pharmaceutical industry. It is also employed as processing supplementary for
refolding genetically engineered protein active molecules, such as it is used
in the production of human insulin. Additionally, it is used as anti-aging
agent in the cosmetic industry. Cysteine has various applications for instance
